Ingredients
- 2 cups pecans (toasted and finely chopped)
- 1 cup graham cracker crumbs
- ½ cup brown sugar

- 3 tbsp melted butter
- 1 cup dark chocolate chips (for coating)
- 1 tbsp coconut oil (to smooth the chocolate)
Instructions
Toast the Pecans
- Heat a dry skillet over medium heat.
- Add pecans and stir occasionally for 3-5 minutes until fragrant.
- Let them cool, then finely chop or pulse in a food processor.
Mix the Dough
- In a large bowl, combine toasted pecans, graham cracker crumbs, and brown sugar.
- Stir in maple syrup, vanilla extract, and melted butter until thick and sticky.
- If too dry, add more maple syrup; if too wet, add extra graham cracker crumbs.
Shape the Balls
- Scoop 1 tablespoon of the mixture and roll into smooth balls.
- Place them on a parchment-lined baking sheet and refrigerate for 20 minutes to firm up.
Melt the Chocolate
- In a microwave-safe bowl, combine chocolate chips and coconut oil.
- Microwave in 20-second intervals, stirring each time, until melted and smooth.
Dip & Set
- Use a fork or skewer to dip each pecan ball into the chocolate.
- Let excess chocolate drip off before placing back on parchment paper.
- Refrigerate for at least 30 minutes until the chocolate hardens.
