Ingredients
½ cup (1 stick) unsalted butter, softened
¾ cup brown sugar
¼ cup granulated sugar
2 large eggs, room temperature
1 tsp vanilla extract
½ cup unsweetened cocoa powder
1 cup all-purpose flour
½ tsp baking soda
¼ tsp salt
½ cup semi-sweet or dark chocolate chips
¼ cup rainbow sprinkles
Instructions
Preheat & Prepare
Preheat your oven to 350°F (175°C).
Line a baking sheet with parchment paper.
Cream the Butter & Sugars
In a large mixing bowl, cream together butter, brown sugar, and granulated sugar until light and fluffy (about 2 minutes).
Add Eggs & Vanilla
Mix in the eggs one at a time, beating well after each addition.
Stir in the vanilla extract.
Combine Dry Ingredients
In a separate bowl, whisk together cocoa powder, flour, baking soda, and salt.
Gradually mix the dry ingredients into the wet ingredients until just combined (do not overmix).
Fold in Chocolate Chips & Shape the Cookies
Gently stir in chocolate chips.
Scoop tablespoon-sized portions of dough onto the prepared baking sheet, leaving 2 inches of space between each cookie.
Bake to Perfection
Bake for 10-12 minutes, until the edges are set but the centers look slightly underbaked.
Remove from the oven and let the cookies sit on the baking sheet for 5 minutes before transferring to a wire rack.
Decorate with Sprinkles
While the cookies are still warm, sprinkle rainbow sprinkles on top and gently press them in so they stick.
Cool & Serve
Let cookies cool completely on a wire rack before storing.
