Ingredients
1 cup chickpeas (cooked, drained, and rinsed)
1 cup black beans (drained and rinsed)
1 cup red kidney beans (drained and rinsed)
½ cup red onion, finely diced
1 cup cherry tomatoes, halved
1 cup shredded lettuce (optional, for added grinder texture)
⅓ cup banana peppers, sliced
¼ cup sun-dried tomatoes, chopped
¼ cup fresh parsley, chopped
2 tablespoons olive oil (extra virgin preferred)
1 tablespoon red wine vinegar
½ teaspoon garlic powder

Instructions
Rinse all the beans under cold water to remove excess salt and canning liquid.
In a large mixing bowl, combine chickpeas, black beans, and red kidney beans. Stir gently to avoid smashing the beans.
